Vegan chocolate mousse

Rich, chocolaty, and smooth, with just the right amount of sweetness, this mousse is a chocolate lover’s dream. 

Prep time: 10 min. Chill time: 3 hours. Makes 4 servings.

Ingredients: 

¼ cup chocolate chips

2 tablespoons water

1 16oz package silken tofu

2 tablespoons plus 2 teaspoons cocoa powder

¼ teaspoon salt

1 teaspoon vanilla extract

1 tablespoon agave (or more for a sweeter mousse)

  1. Combine the chocolate chips and water and cook over low heat until the chocolate is melted.
  2. Add all ingredients (including the melted chocolate mixture) to a blender and blend until smooth.
  3. Taste and add more cocoa powder and/or agave if desired
  4. Transfer to a container and let chill in the fridge for at least 3 hours before serving. If there is liquid on top of the mousse after chilling, it’s okay. This liquid has come out of the tofu as it sets. Just pour it out into the sink. Enjoy!
