Vegan chocolate and ginger cream pie


I’m double posting today because pie crust screams for filling! The dark, rich chocolate layer and light, mildly spicy ginger layer contrast in this creamy custard pie, making it delicious for the eyes as well as the mouth. Top with fruit or whipped cream, and you have yourself a stunning dessert for any occasion.

Prep Time: 30 minutes   Bake/chill Time: 20 minutes of bake time for the crust. 2 hours of chill time once the filling is added.

Ingredients:

1 recipe pie crust dough

For the chocolate layer:

½ cup silken tofu

1 cup water

2½ tablespoons cornstarch

¼ cup sugar

3 tablespoons cocoa powder

1 teaspoon vanilla extract

¼ teaspoon salt

For the ginger layer:

½ cup silken tofu

1 cup water

3 tablespoons cornstarch

¼ cup sugar

½ teaspoon powdered ginger

1 teaspoon vanilla extract

¼ teaspoon salt

  1. Roll out your pie crust, put it into a 9 inch pie pan, place parchment paper and pie weights in it, and bake at 350 for 15 minutes. Remove the parchment paper and pie weights and bake another 5 minutes before you start the fillings.
  2. Blend your silken tofu and measure ½ cup for the chocolate layer and a separate ½ cup for the ginger layer. Set aside.
  3. To make the chocolate layer, whisk together the water, cornstarch, sugar, cocoa powder, vanilla, and salt in a pot over medium-low heat.
  4. Continue to whisk until the mixture comes to a low boil and thickens. Remove from the heat and whisk in the ½ tofu that you set aside for the chocolate layer, then pour the mixture into the crust. Use a rubber spatula to smooth the surface. Place in the fridge.
  5. To make the ginger layer, whisk together the water, cornstarch, sugar, ginger, vanilla extract, and salt in a pot over medium-low heat. 
  6. Like you did with the chocolate layer, continue to whisk until the mixture comes to a low boil and thickens. Remove from the heat and whisk in the ½ cup tofu that you set aside for the ginger layer. Remove the pie from the fridge and pour the custard on top. Refrigerate again for at least 2 hours before topping and serving.
  7. Top with your favorite fruit and/or whipped cream. Enjoy!
