Vegan apple-cinnamon waffles


As you can probably tell based on my prior posts, I love apples and I love breakfast foods. So of course, I love these apple waffles!

Prep Time: 15 min  Cook Time: 30 min

Ingredients:

2½ cups soy milk

1 cup soy yogurt

1 tablespoon vanilla extract

1 tablespoon lemon juice

1½ cups whole wheat flour

1½ cups all purpose flour

3 tablespoons cornstarch 

4 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

2 teaspoons cinnamon

¼ teaspoon nutmeg

2 tablespoons white sugar

1 tablespoon brown sugar

½ teaspoon cream of tartar (optional)

6 tablespoons aquafaba

2 cups diced apples

  1. Whisk together the soy milk, yogurt, vanilla, and lemons juice in a small bowl.
  2. In a separate bowl, mix together the flour, cornstarch, baking powder, baking soda, salt, cinnamon, nutmeg, and white and brown sugar. 
  3. Use an electric mixer to whisk your aquafaba and cream of tartar (if using) until the aquafaba holds peaks.
  4. Preheat your waffle iron.
  5. Whisk the milk mixture into the dry ingredients, stir in the apples, then gently fold in the aquafaba. Be careful not to over mix so that you don’t lose the air in the aquafaba.
  6. Pour the batter into your waffle iron (amount of batter will vary depending on the size of your iron), and let cook for the amount of time directed by your iron or a little longer to make the outside crisper (it takes 4-5 minutes per waffle on my iron). Note, if your iron isn’t nonstick, make sure to grease it first!
  7. Serve warm with your favorite toppings!
