
This delicious and easy-to-make dip combines white beans, peaches, avocados, tomatoes, and onion, creating a marvelous mix of salsa and guacamole flavors. It’s perfect for serving alongside chips, in burritos or tacos, over lettuce, or simply on its own.
Prep Time: 15 min. Serves: 6-10
Ingredients:
2 cans white kidney beans
2 avocados, chopped
3 peaches, chopped
2 big tomatoes, chopped
1 small yellow or red onion, diced
¼ cup lime juice
½ teaspoon salt
¼ teaspoon pepper
Fresh cilantro (optional)
Mix all ingredients together in a bowl and chow down.

Amelia: this was amazing. I loved it and boys and Hallie chowed down too. Hallie commented, “I usually avoid peach salsa but this was REALLY GOOD!!” We did 3 cans of beans and increased recipe by 50% and there are only about 4 bites left. Sad about that….! Thank you.
P.S. made Charlie a raspberry pie with your pie crust tonight. Looks yummy but we’re going to let it set overnight before we tuck in. It’s for Charlie’s Bday so he declares that he gets 13/16ths of it and we get the rest. Again sadness…
